Elli Spring joined Nebraska Athletics in April 2025 as a performance nutrition coordinator. Spring is responsible for assisting with performance nutrition for Nebraska Football.
Prior to Nebraska, Spring served as a sports nutrition fellow at Florida State, overseeing performance nutrition for the football program. With the Seminoles, Spring managed the performance fueling station, assisted in receiving large food and supplement deliveries and stocking storage rooms, helped pack competition and travel snacks for the football program and coordinated the management of student-athlete blood work and supplementation for nutrient deficiencies in coordination with team physicians and athletic trainers.
Spring earned her bachelor's degree in culinary nutrition and applied dietetics from Johnson & Wales University in Providence, Rhode Island, in May 2020. She received her master's degree in exercise physiology and sports nutrition from Florida State University in Tallahassee, Florida, in August 2024.
Elli, originally from Harwinton, Connecticut, was a Division II student-athlete at Long Island University (2016-18) before transferring to Johnson & Wales.
