Julian Franklin is in his second season as a football performance chef and registered dietitian at Nebraska in 2024.
In his role as culinary dietitian, Franklin consults and educates student-athletes on performance nutrition, individual meal plans, weight loss/gain, hydration and medical conditions. He also provides oversight of daily football meals through communication with the executive chef and assists with the execution of daily meals/demos. Additionally, Franklin assists with planning and developing menus, action stations and demos.
Previously, Franklin was a culinary dietitian at South Carolina from 2020 to 2023. Prior to South Carolina, he was a performance chef and front-of-house manager at Alabama from 2017 to 2019, helping the Crimson Tide football program to a national championship.
Franklin earned his bachelor's degree in culinary nutrition from Johnson & Wales University in 2017. He went on to earn his master's degree in human nutrition from Alabama in 2020. A Connecticut native, Franklin remains active with his alma mater, as he serves as a liaison for Johnson & Wales and other culinary internship programs.
